Breaded Pork Chops and Gravy

This was my favorite meal as a kid. My mom would always serve these pork chops with mashed potatoes and noodles and we’d smother the whole plate in gravy. It may have been one of the least healthy things she ever served (she was and is a bit of a health nut), but it was definitely the best tasting meal in my opinion. Directions:

  1. In small bowl, beat 2-3 eggs (depending on number of chops).
  2. In a second small bowl, mix bread crumbs and parmesan cheese.
  3. Dip the pork chops into the egg then into crumbs and repeat. Spray the coated chops with cooking spray. (The breading will separate from the chops during cooking if you don’t spray them.)                Breaded Pork Chops and Gravy
  4. Spray large skillet with cooking spray and put on medium heat.
  5. When skillet is heated, brown the pork chops on both sides.                        Breaded Pork Chops and Gravy
  6. Once the chops are browned on both sides add mixture of 2 cups water and 2 bouillon cubes and reduce heat.
  7. Simmer for 50 minutes. Flip the pork chops once after 25 minutes.

To make the gravy:

  1. Once pork chops are cooked all the way through, remove them from skillet leaving the liquid.
  2. Mix ½ cup water with 2 tbsp. in a small cup until no lumps are left.
  3. Slowly pour water and flour mixture into the broth in skillet. Stir over medium heat until gravy thickens.
